What you may not know is that there are, in fact, two main types:
  • Ceylon – Also known as “true” cinnamon.
  • Cassia – This is the common variety seen today
The spice is produced by cutting the stems of the ‘cinnamomum’ tree. The inner bark is then extracted, and the hard woody parts are removed from it. Once dry, it forms strips which curl into rolls and form sticks. The sticks are used as they are, or alternatively can be ground to form a powder.
